- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, baking soda, and salt. Set aside.
- In another bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
- Add vanilla extract and egg to the butter-sugar mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Fold in the chocolate chips.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure to use finely ground almond flour for the best texture.
- You can substitute coconut sugar for brown sugar for a lower glycemic index.
