Description

These air fryer stuffed peppers are a quick and easy meal packed with flavor! Perfect for a weeknight dinner, they’re made with fresh vegetables, protein, and spices, all cooked to perfection in an air fryer.


Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground turkey or beef
  • 1 cup cooked rice or quinoa
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your air fryer to 360°F (182°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the ground meat, cooked rice or quinoa, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
  4. Stuff each bell pepper with the meat mixture, packing it in tightly.
  5. Sprinkle the tops of the stuffed peppers with shredded cheese.
  6. Place the stuffed peppers upright in the air fryer basket. You may need to work in batches, depending on the size of your air fryer.
  7. Cook the stuffed peppers in the air fryer for 15-20 minutes, or until the peppers are tender and the meat is cooked through.
  8. Once done, remove from the air fryer and let cool for a few minutes. Garnish with fresh parsley if desired.
