These air fryer stuffed peppers are a quick and easy meal packed with flavor! Perfect for a weeknight dinner, they’re made with fresh vegetables, protein, and spices, all cooked to perfection in an air fryer.

- 4 large bell peppers (any color)
- 1 lb ground turkey or beef
- 1 cup cooked rice or quinoa
- 1 can diced tomatoes (14.5 oz), drained
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your air fryer to 360°F (182°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the ground meat, cooked rice or quinoa, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Stuff each bell pepper with the meat mixture, packing it in tightly.
- Sprinkle the tops of the stuffed peppers with shredded cheese.
- Place the stuffed peppers upright in the air fryer basket. You may need to work in batches, depending on the size of your air fryer.
- Cook the stuffed peppers in the air fryer for 15-20 minutes, or until the peppers are tender and the meat is cooked through.
- Once done, remove from the air fryer and let cool for a few minutes. Garnish with fresh parsley if desired.
