Description

Deliciously moist and fluffy muffins made quick and easy in your air fryer. Perfect for a quick breakfast or snack!


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (or chocolate chips, nuts, etc.)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the melted butter, eggs, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
  4. Preheat your air fryer to 320°F (160°C) for about 5 minutes.
  5. Line your muffin tray with paper liners or grease with non-stick spray.
  6. Scoop the muffin batter into the muffin tray, filling each cup about 2/3 full.
  7. Place the muffin tray in the air fryer basket and cook at 320°F (160°C) for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tray for a few minutes before transferring them to a wire rack to cool completely.
