Ingredients

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for extra crunch)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a large bowl, toss the sliced eggplant with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  3. If using, add breadcrumbs and Parmesan cheese, tossing to coat the eggplant evenly.
  4. Arrange the eggplant slices in a single layer in the air fryer basket. You may need to work in batches depending on the size of your air fryer.
  5. Air fry for 12-15 minutes, flipping halfway through, until the eggplant is golden brown and crispy.
  6. Remove from the air fryer and serve immediately as a side dish or snack.
