Ingredients

- 1 large eggplant, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for extra crunch)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, toss the sliced eggplant with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
- If using, add breadcrumbs and Parmesan cheese, tossing to coat the eggplant evenly.
- Arrange the eggplant slices in a single layer in the air fryer basket. You may need to work in batches depending on the size of your air fryer.
- Air fry for 12-15 minutes, flipping halfway through, until the eggplant is golden brown and crispy.
- Remove from the air fryer and serve immediately as a side dish or snack.
