- 1 medium eggplant, sliced into 1/2 inch rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for extra crunch)
- Grated Parmesan cheese (optional, for serving)
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, combine the sliced eggplant, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. If using breadcrumbs, add them in as well and toss everything together until the eggplant is well coated.
- Arrange the eggplant slices in a single layer in the air fryer basket. You may need to do this in batches.
- Cook the eggplant for 12-15 minutes, flipping halfway through, until they are golden brown and crispy.
- Once cooked, remove the eggplant from the air fryer and sprinkle with grated Parmesan cheese if desired. Serve warm.
Notes
- For extra flavor, marinate the eggplant slices in the seasoning mix for 30 minutes before cooking.
