- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup shredded coconut, sweetened or unsweetened
- 1/2 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a shallow bowl, combine flour, garlic powder, paprika, salt, and pepper.
- In a second bowl, add beaten eggs.
- In a third bowl, mix shredded coconut and panko breadcrumbs.
- Dredge each shrimp in the flour mixture, shaking off the excess.
- Dip the shrimp into the beaten eggs, then coat with the coconut and breadcrumb mixture, pressing gently to adhere.
- Spray the air fryer basket with cooking spray and place the shrimp in a single layer without overcrowding.
- Lightly spray the tops of the shrimp with cooking spray.
- Cook in the air fryer for 8-10 minutes, flipping halfway through, until shrimp are golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
- For a spicier kick, add cayenne pepper to the flour mixture.
