Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup shredded coconut, sweetened or unsweetened
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a shallow bowl, combine flour, garlic powder, paprika, salt, and pepper.
  3. In a second bowl, add beaten eggs.
  4. In a third bowl, mix shredded coconut and panko breadcrumbs.
  5. Dredge each shrimp in the flour mixture, shaking off the excess.
  6. Dip the shrimp into the beaten eggs, then coat with the coconut and breadcrumb mixture, pressing gently to adhere.
  7. Spray the air fryer basket with cooking spray and place the shrimp in a single layer without overcrowding.
  8. Lightly spray the tops of the shrimp with cooking spray.
  9. Cook in the air fryer for 8-10 minutes, flipping halfway through, until shrimp are golden brown and crispy.
  10. Serve immediately with your favorite dipping sauce.

Notes

  • For a spicier kick, add cayenne pepper to the flour mixture.
