Ingredients

  • 1 lb ground beef or shredded chicken
  • 1 can (15 oz) refried beans
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 8 large flour tortillas
  • Cooking spray
  • Optional toppings: sour cream, guacamole, chopped cilantro

Instructions

  1. In a large skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat if necessary.
  2. Stir in the refried beans, salsa, chili powder, cumin, and garlic powder. Mix until heated through and combined. Remove from heat.
  3. Lay a tortilla flat on a clean surface. Spoon about 1/3 cup of the filling mixture onto the center of the tortilla.
  4. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with remaining tortillas and filling.
  5. Preheat your air fryer to 375°F (190°C).
  6. Spray each chimichanga lightly with cooking spray to help them crisp up.
  7. Place the chimichangas in the air fryer basket in a single layer, making sure they are not touching. You may need to work in batches.
  8. Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  9. Serve warm with your choice of toppings such as sour cream, guacamole, or cilantro.

Notes

  • For a vegetarian option, substitute ground meat with black beans or additional refried beans.
  • You can also add diced bell peppers or onions to the filling for extra flavor.
  • If you prefer a spicier chimichanga, add diced jalapeños to the filling mixture.
