Crispy, delicious air fryer chimichangas filled with savory flavors and easy to make!
Ingredients

- 1 lb ground beef or shredded chicken
- 1 can (15 oz) refried beans
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 8 large flour tortillas
- Cooking spray
- Optional toppings: sour cream, guacamole, chopped cilantro
Instructions
- In a large skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat if necessary.
- Stir in the refried beans, salsa, chili powder, cumin, and garlic powder. Mix until heated through and combined. Remove from heat.
- Lay a tortilla flat on a clean surface. Spoon about 1/3 cup of the filling mixture onto the center of the tortilla.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with remaining tortillas and filling.
- Preheat your air fryer to 375°F (190°C).
- Spray each chimichanga lightly with cooking spray to help them crisp up.
- Place the chimichangas in the air fryer basket in a single layer, making sure they are not touching. You may need to work in batches.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Serve warm with your choice of toppings such as sour cream, guacamole, or cilantro.
Notes
- For a vegetarian option, substitute ground meat with black beans or additional refried beans.
- You can also add diced bell peppers or onions to the filling for extra flavor.
- If you prefer a spicier chimichanga, add diced jalapeños to the filling mixture.
