- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or your choice)
- 1 cup cooked breakfast sausage or bacon, crumbled
- 1 cup diced bell peppers and onions
- 4 large flour tortillas
- Salt and pepper to taste
- Cooking spray
Instructions
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat. Add bell peppers and onions, sautéing until softened, about 3-4 minutes.
- Pour in the egg mixture and cook, stirring gently, until the eggs are just set. Remove from heat and stir in the cheese and crumbled sausage or bacon.
- Lay out each tortilla and spoon an equal amount of the egg mixture into the center of each. Fold in the sides and roll up tightly to form a burrito.
- Preheat the air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray.
- Place the burritos seam-side down in the air fryer basket. Spray the tops lightly with cooking spray.
- Air fry for 8-10 minutes, or until the burritos are golden brown and crispy, flipping halfway through.
- Serve warm with salsa or your favorite dipping sauce.
