Ingredients

  • 2 medium potatoes, diced
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 cup cherry tomatoes, halved
  • 4 eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine diced potatoes, bell pepper, onion, and cherry tomatoes. Drizzle with olive oil and season with salt, pepper, paprika, and garlic powder. Toss to coat evenly.
  3. Place the vegetable mixture in the air fryer basket in a single layer. Air fry for 15 minutes, shaking the basket halfway through.
  4. After 15 minutes, make four small wells in the hash and crack an egg into each well. Return the basket to the air fryer and cook for an additional 5-7 minutes, or until the eggs are cooked to your liking.
  5. Remove the hash from the air fryer and garnish with fresh parsley before serving.

Notes

  • Feel free to customize the vegetables based on your preference.
  • For a spicy kick, add some diced jalapeños or a dash of hot sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
