- 2 medium potatoes, diced
- 1 bell pepper, diced
- 1 small onion, diced
- 1 cup cherry tomatoes, halved
- 4 eggs
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Fresh parsley, chopped for garnish
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine diced potatoes, bell pepper, onion, and cherry tomatoes. Drizzle with olive oil and season with salt, pepper, paprika, and garlic powder. Toss to coat evenly.
- Place the vegetable mixture in the air fryer basket in a single layer. Air fry for 15 minutes, shaking the basket halfway through.
- After 15 minutes, make four small wells in the hash and crack an egg into each well. Return the basket to the air fryer and cook for an additional 5-7 minutes, or until the eggs are cooked to your liking.
- Remove the hash from the air fryer and garnish with fresh parsley before serving.

- Feel free to customize the vegetables based on your preference.
- For a spicy kick, add some diced jalapeños or a dash of hot sauce.
